1 ¼ pounds raw lean ground turkey
3 cups bagged broccoli cole slaw, roughly chopped
1 small onion, grated
½ cup fat-free liquid egg substitute (or egg whites)
½ cup quick-cooking oats
7 tbsp. ketchup, divided
2 tsp. garlic powder
1 tsp. salt
Line 9 compartments of a muffin pan with baking cups or spray with nonstick spray.
Combine all ingredients except 3 tbsp. ketchup in mixing bowl. Thoroughly mix. Distribute mixture evenly among cups. Brush 1 tsp. ketchup on top of each meatloaf.
Bake at 350° until firm with edges lightly brown, 30 - 35 minutes.
