2 eggs
2 cups of oats flour
¼ teaspoon nutmeg
½ teaspoon salt
1 teaspoon ground cinnamon
1 cup yogurt
¼ cup olive oil
1/3 cup honey
1/3 cup brown sugar
2 cups pumpkin puree
2 thick slices of ginger or 2 teaspoons ground ginger

Mix flour, salt and spices. If you have fresh ginger, blend it with the pumpkin puree. Beat the eggs with the sugar until double-sized and fluffy. Mix oil, yogurt and honey. Add this mixture to the egg, then the pumpkin. Mix with a wooden spoon and finally add the flour.
Pour the mixture into greased and floured muffin tins and bake in a preheated oven at 190°C for about 25 minutes until golden.
