Put in a large bowl the meat, 2 tablespoons oats, parsley and egg, mix with your hands.
Take half of the mozzarella (or similar cheese) and half of the mortadella and chop as finely as possible, with a grinder you have better results. Add this mixture along with the parmesan to the meat. Season to taste with salt and pepper; continue mixing with your hands.
Meanwhile heat the oven to 350°F.
Place in a platter or a large cutting board the rest of the oats, spread the meat with your hands to form a rectangle of a finger high and about 25 X 15 cm. Spread the rest of the cheese and mortadella over the meat into small pieces. Roll the meat by the longest part; make sure there are no open ends. Roll it over the oats to be covered perfectly.
Spread a tablespoon of olive oil in a baking dish, place the meatloaf and roll it so that it is lightly oil covered. The meat releases its own fat so you don’t need to add more oil. You can add small tomatoes or potatoes in wedges on the sides, so they cook together. The meat juice released will make them more tasty.
Bake until golden brown for about 20 minutes.
