Oat Empanadas with Chard and Goat Cheese

Ingredients

For the Oat Dough
 3 cups all-purpose flour (750 ml)
 1 ¼ cups quick oats (310 ml)
 2 tsp salt (10 ml)
 1 tbsp turmeric (15 ml)
½ cup cold butter (125 ml)
 1 egg
½ cup olive oil (125 ml)
For the Chard and Cranberry Filling:
1 Tbsp olive oil (15 ml)
 ½ onion, diced
2 bunches Swiss chard, rinsed and shaken dry
1 cup grated carrot (250 ml)
 Salt to taste
 Freshly ground pepper to taste
¼ cup dried cranberries (60 ml)
2 oz soft goat cheese (70 grams)
For Assembly
 1 egg, lightly beaten
 2 tbsp oats (30 ml)

Directions

For the Oat Dough:
1

Place oats in a bowl. Add enough cold water to cover and soak for 15 minutes. Drain well.

2

In the bowl of a food processor, combine flour, salt and turmeric. Pulse to combine.

3

Add butter and oil. Pulse until mixture looks like coarse, wet sand.

4

Add egg and pulse until combined.

5

Add 1/4 of the soaked oats and pulse until incorporated. Continue to add oats, 1/4 at a time, pulsing to incorporate. Pulse until dough forms a ball.

6

Turn out onto a well-floured surface and knead lightly, adding additional flour if dough is sticky. Flatten ball of dough, wrap well in plastic wrap and chill for one hour.

For the Filling:
7

In a large, non-stick skillet, sauté onion in olive oil until softened.

8

Add chard and carrot, and cook until chard is tender. Season to taste with salt and pepper.

9

Remove from heat and stir in cranberries. Allow filling to cool completely before filling empanadas.

Assembly:
10

Divide the dough in half. Keep one half wrapped while you work with the other.

11

On a lightly-floured surface, thinly roll out dough.

12

Cut dough into 4 – 5” circles, using a knife with a plate as your guide. Reserve any extra dough.

13

Place a spoonful of the chard filling into center of each circle of dough. Add a couple small pieces of goat cheese to each.

14

Brush the edges of the dough with beaten egg, then fold-over to make a half-circle, pressing with your fingers. Crimp the rounded edge with a fork to seal. Place on a parchment-lined baking sheet.

15

Repeat with second half of dough and trimmings.

16

Brush each empanada with beaten egg and sprinkle with oats.

17

Bake immediately or refrigerate for up to one hour.

18

Bake empanadas at 375°F (190°C) for 15 minutes, or until golden.

19

Serve warm or at room temperature
