Blend eggs, flour, nutmeg, spinach, milk and salt. Transfer the mixture to a bowl. Meanwhile chop the cheese, ham, tomato and cilantro. Set aside.
Heat up a large skillet until very hot, then lower the flame and add a few drops of oil, move the pan so that the oil covers the entire surface.
Pour a large tablespoon to the pan and spread it, the batter is thick; therefor you will need to use the spoon. After about 40 seconds take a spatula and check if the bottom side is cooked. Then flip it over and cook the other side. Repeat until the batter is finished.
Take each of the crepes and put cheese and ham, only on the low half, with a little tomato. Fold it and garnish with cilantro and tomato.
