Crackerjack Cookies

Ingredients

 1 cup butter or margarine
 1 cup granulated sugar
 1 cup packed brown sugar
 2 large eggs
 1 tsp vanilla
 1 ½ cups all purpose flower
 1 tsp baking powder
 1 tsp baking soda
 2 cups quick cooking oats
 2 cups crisp rice cereal
 1 ½ cups chopped salted peanuts
 1 ½ cups flaked coconut

Directions

Preheat oven to 350 F (175 C). Spray cookie sheets with non-stick cooking spray.

In medium bowl, combine butter and sugars. Beat in eggs one at a time. Add vanilla.

In separate bowl combine flour, baking powder and soda. Stir into creamed mixture.

Gently stir in oats, cereal, peanuts and coconut.

Drop by teaspoonfuls onto prepared cookie sheets. Bake 10 – 12 minutes. Remove from cookie sheet and cool on wire racks.

Tip: Instead of dried cranberries, substitute your favourite dried fruit. For a thicker, chewier oatmeal, use a 9 x 9-inch baking dish instead of a 9 x 13-inch baking dish.
