Honey Oat Yeast Bread

Ingredients

 1 cup (240 mL) boiling water
 1 cup (90 grams) whole oats
 ¼ cup (50 grams) brown sugar
 1 tbsp honey
 ¼ cup (60 grams) butter
 1 tbsp salt
 1 tbsp dry active yeast
 1 ½ cups (180 grams) oat flour*
 4 cups cups (500 grams) bread

Directions

In a large mixing bowl, combine the water, oats, brown sugar, honey, butter, and salt. Let cool to lukewarm, about 10 to 15 minutes.

Add the yeast and flours, stirring to form a rough dough. Knead by hand for about 10 minutes, until the dough is smooth and shiny.

Transfer the dough to a lightly greased bowl, cover the bowl with lightly greased plastic wrap, and allow the dough to rise for 1 hour, or until almost doubled in size.

Divide the dough in half, then shape each half into a loaf. Place the loaves in two greased 8 1/2" x 4 1/2" bread pans.

Cover the pans with a clean kitchen towel and allow the loaves to rise for 60 to 90 minutes, until they have risen just above the edge of the pans.

Bake the loaves in a preheated 350°F (190°c) oven for 35 to 40 minutes, covering them lightly with aluminum foil after 25 minutes, to prevent over-browning. Remove them from the oven when they're golden brown. Let loaves cool for at least 20 minutes before cutting.

*To make oat flour, put 2 cups of whole oats in a blender and blend for 2-3 minutes, until you have a fine flour.
