Pumpkin Pudding with Oats and Ginger

Ingredients

 2 eggs
 2 cups oat flour
 ¼ tsp nutmeg
 ½ tsp salt
 1 tsp ground cinnamon
 1 cup yogurt
 ¼ cup olive oil
  cup honey
  cup brown sugar
 2 cups pumpkin puree
 2 2 thick slices of ginger or 2 teaspoons ground ginger

Directions

Mix flour, salt and spices. If you have fresh ginger, blend it with the pumpkin puree.

Beat the eggs with the sugar until double-sized and fluffy.

Mix with a wooden spoon and finally add the flour.

Pour the mixture into greased and floured muffin tins and bake in a preheated oven at 190°C for about 25 minutes until golden.
